T-Coons Restaurant was started by David Billeaud, a 6th generation Billeaud from Broussard whose French ancestors came to Acadiana from Nova Scotia. Prior to opening his first T-Coon's restaurant in 1993,heI had no restaurant experience at all, but I grew up surrounded by cooking. There were nine in the family and both of his parents were excellent cooks.
Because of the frequent misue of the word Cajun, David has chosen the term Zydeco as it better represents the flavor of T-Coon's. Zydeco implies a mix of the Creole and Cajun influences that are exclusive to this area of Southern Louisiana. Travel just a few miles in any direction and you quickly lose the true Zydeco influence.
