Our Team

 

Logan Long
General Manager

Logan received his Bachelor's degree in Hospitality Management from the University of Louisiana at Lafayette in May 2019. Shortly after, he relocated to Martha's Vineyard, Massachusetts where he managed The Dockside Inn, a boutique hotel in the town of Oak Bluffs. Once the summer season ended and the hotel closed for the fall, he returned to the University of Louisiana at Lafayette in January 2020 and received his MBA with a concentration in Hospitality Management. Logan joined our team in June 2021 as a backserver, quickly worked his way to server, and later became a shift manager. Along the way, he took the lead on managing our social media and content creation, as well as liaison for catering and events.

Jeremy Conner
Partner / Executive Chef

Born in Opelika, Alabama, Chef Jeremy Conner grew up and began his career in the kitchens of Pensacola, Florida, before flourishing as a chef in Lafayette, Louisiana. His resulting diversified perspective on Southern food culture and Gulf Coast seafood flavors allows him to craft his own unique cuisine.

For years, Chef Conner has set out to follow the trails of his ingredients back to the people and the stories at their origins. His Humble Fish dinner series and Gulf of Mexico sea salt business, Cellar Salt Co. are some of the results of these efforts, and he remains in search of stories about all things food and South. Now, Chef Conner is ready to share those stories with patrons of Spoonbill Watering Hole & Restaurant.

Adam Loftin
Managing Partner

Adam Loftin was born in Madison, Wisconsin, and grew up in Managua, Nicaragua. After beginning his working career in a restaurant kitchen in New Orleans, Loftin has gained extensive experience in operations and management. Loftin serves as the Vice President of Teal Realty and is a graduate of Loyola University New Orleans and holds a masterโ€™s degree in real estate from New York University.

Loftin is a LEED Accredited Professional as recognized by the U.S. Green Building Council (USGBC), an active Rotarian with the Rotary Club of Lafayette South, a graduate of Leadership Lafayette Class XXX, and was recently named one of Lafayetteโ€™s Top 20 Under 40. Loftin is a natural born learner, and with his experience, he will help in guiding Spoonbill to new heights.

Stephen Verret
Partner

Stephen Verret is a designer, developer, creator, and entrepreneur. Born in Lafayette, Verret moved to Los Angeles in 2011, where he immersed himself in the cityโ€™s modern takes on bar and restaurant culture. This experience inspired his decision to move back to Lafayette in 2014 to open the pop-up bar and pizza party known as Olympic Grove.

Over the years, Verret worked with businesses to build a digital presence. His experiences have given him a strong eye for design and detail, client management skills, and overall love for everything food and beverage which makes him the ideal candidate for crafting the perfect customer experience.
